Pumpkin quiche with thyme, cinnamon, goat cheese and a touch of honey

- cake pan 24 cm
- baking paper
Ingrediënten
- sheets puff pastry for one pie
- 450 gram pumpkin pieces
- 2 teaspoon cinnamon
- ¼ teaspoon freshly grated nutmeg
- pepper and salt
- 2 tablespoons sour cream
- 2 eggs
- 6 prigs of thyme
- 150 gram soft goat cheese
- 1 tablespoon honey
- 1 tablespoon olive oil
Instructies
- Line the cake tin with the baking paper.
- Line the cake tin with the puff pastry. Press gently.
- Divide the pumpkin cubes over the puff pastry.
- Beat the eggs in a bowl. Add the Greek yogurt, cinnamon, cloves, nutmeg, pepper and salt. Mix well.
- Pour the filling over the pumpkin in the pie pan.
- Spread half of the thyme over it, then the goat cheese and then the rest of the thyme.
- Mix the honey with the olive oil and lemon juice. Divide the honey mixture over the goat cheese with thyme.
- Place the pumpkin quiche in the oven at 180 degrees for 30 minutes.
- The quiche is ready when the puff pastry is a nice golden brown and the pumpkin pieces are cooked.
